Alright, I just watched DMC tonight, and I've come up with a theory. The first time the compass points to Jack when Elizabeth has it, I think that what it means is that Elizabeth wants to be a pirate like Jack. I mean, in CotBP she's says that she's read about every single one of Jack's escapades, and in the second Jack talks about how she wants freedom. So I think it's possible that what she could want is the freedom of being a pirate, which is what Jack represents, but because it's pointing at Jack she misinterprets what she wants.

Absolutely I think you've hit the nail on the head there, Psnoo. Not one for sipping tea and official engagements is Elizabeth Swann ;D What a terrible match for Norrington she would have made!
