"Ingredients: ~5 Tbsp. annatto seeds ~2 tsp. cumin seeds ~1 Tbsp. whole black pepper ~8 whole allspice berries ~1 tsp. cloves ~2 habanero peppers ~2 Tbsp. salt ~8 cloves garlic ~1/2 c. orange juice ~1/2 c. white vinegar ~5 lemons, juiced ~1 shot (1 1/2 oz.) tequila ~5 lbs. pork butt ~banana leaves [you'll need about four or five sheets] Instructions: 1) Grind the dried spices (annatto, cumin, black pepper, allspice, and cloves), thoroughly (I'd use a blade-style coffee grinder, though not one that I ever intend to use for coffee again). 2) Mince the habenero peppers, after removing the seeds. 3) Combine orange juice, vinegar, lemon juice, tequila, dried spices, minced habenero, salt, and garlic in a blender. Liquify. 4) Cut pork into 2 inch squares, place in a large ziplock bag, and fill with the marinade. let marinate for at least twenty minutes (overnight is fine, too). 5) Line a 9" x 12" pan with banana leaves, pour pork & marinade in, cover with more banana leaves, cover tightly with foil. 6) Cook at 325 degrees F. for four hours . Oh man, it's been a long time since I've seen the movie, and OH MAN did I have a craving for puerco pibil after the credits rolled to a stop. And the worst part was that I couldn't make it because that gosh darn guy on the DVD talked so fast! But thanks to this mysterious Michael dude, I can finally make it. Thanks for posting that, Artisan of Quirk! ;D Always good to have this recipe around. As long as we don't perfect it. Our fearless Leader, the Caribbean Crusader, made the themes, including the Sands one. It is indeed loverly.

Subject, Uno) Yeah, I thought that this really applied to the site, you know? What's an OUATIM site to do without the pibil recipe! Subject, Dos) Hehehe. I'm just telling the truth, Arenas. ;D Y Subject, Tres) And as for the pibil, I STILL haven't tried it. Though, I hope to make it to perfection (Yeah that's right, I plan to cross the line. Muhuhahaha.) as soon as my mom will let me destroy her kitchen with experiments. And don't worry, I'll be back to tell the tale, too. I think the banana leaves will be the toughest to get, myself. And a coffee grinder that should never be used again? Come on now, there's got to be another way! *sigh* This will be more work than I thought. But if anyone else is willing to try, go ahead. I'm not gonna be the pibil hog. If it's so good Sands ( ) had to shoot someone... I want you guys to try it too. Oh, I'm just kidding, -Izzy

I think some stores (possibly most) carry some pre-ground form of annatto. Or at least, that's what I've read somewhere. I also heard it's not as good as fresh ground. Win some, lose some. The tequila's supposed to be the most important part anyway, isn't it? I have not had the good fortune to try it. I live in one of the most uncultured places in the US and have no way of obtaining some of the ingredients or a place that will make it. Someone better relay what it's really like for the rest of us unlucky saps, savvy?

Well, I've been looking for Puerco Pibil in just about every mexican restaurant I come across and so far, most people have never heard of it, much less serve it. And so, THAT'S why I'm trying to make it. Savvy? PS. Thanks for the tips on the spices. I'll keep that all in mind. I just need to find a night where no one's cooking so I can make it. ;D

Okay... I tried making it... and wow I have no talent what so ever in cooking... it didn't turn out right... but it was rather good. But I went to a local restaurant and asked the cook for Puerco Pibil ...and he's like. "You must be a Depp fan?" ...and I blushed madly... but he made it for me... gotta love small towns!

I wasn't very surprised about that though. We had to improvise a bit on some of the ingredients as we couldn't find the habanero peppers (we just took red peppers) and some of the spices.. It didn't taste bad though! But it just didn't look the same way at all! Great that you got to eat the real thing there! Did you like it?
